Black Bean Corn Salad with Lemon Poppy Seed Dressing Ingredients 3 ears corn, cooked, or 2 cans corn 1 15-ounce can black beans, drained and rinsed 1/2 cup red onion, finely chopped 1/2 red bell pepper, cored and chopped 1/2 green bell pepper, cored and chopped 2 cups cherry tomatoes, halved 1 cup fresh basil, chopped Lemon Poppy Seed Dressing: 3 Tbsp avocado oil mayonnaise, or mayo of choice 2 Tbsp avocado oil, or oil of choice 1 tsp lemon zest 1 Tbsp fresh lemon juice 1 Tbsp pure maple syrup 1 small clove garlic, minced 2 tsp poppy seeds 1/4 tsp sea salt Instructions If using canned corn, open the cans, drain using a colander, and transfer corn to a large mixing bowl
