Remaining fizzy there was sweet pink wafer with cinder toffee and a herbal edge with dandelion and burdock before orange and blackberry fruit and a woody finish of furniture polish on charred oak

The neat palate is not particularly sweet – rather oily

With a drop of water we were making damson jam as well as a dark fruit loaf, cinder toffee and roasted honey glazed carrots.
